Freeze drying is a scientific procedure known as lyophilisation. It takes 36 hours for a cycle to complete, during which all water is removed from the products. Typically used to produce food for astronauts or military rations. Which doesn't sound exciting at all... until you try freeze dried sweets!

The flavour is more intense, the texture changes completely, Skittles goes from chewy to crunchy, while Squashies go from chewy to crunchy too, whilst it also melts in your mouth, when it all forms together and finishes off with a chew!
